Tomato Spinach Bowtie Pasta!

Not a lot of people know, but I Chicken & I aren't best friends.

So luckily for my 4 chickens at home, they'd for sure never be eaten by me ;)


Anyways, I also limit dairy for my thyroid.

SO... after searching recipes that fit my criteria, I found this recipe, tried it and it was a hit!!

Super simple, lots of flavor & filling!


* 1lb Italian Sausage

* 4 servings of Pasta (we used bowtie)

* 2 Garlic Cloves

* 7oz. Cherry Tomatoes, roughly chopped

* 1 Handful Fresh Spinach

* 2 tbsp. Tomato Puree

* 1 tsp. Paprika

* 1/2 tsp. Cayenne

* 1 tbsp. Olive Oil

* 1/2 tsp. Chili Flakes

* 1/2 tsp Pepper


  1. Start by cooking the pasta al dente, according to the packaging.

  2. While the pasta is cooking, sauce the sausage meat, breaking it up with a wooden spoon until it is almost cooked through. Add the garlic & a drizzle of olive oil until fragrant & the sausage is all the way cooked.

  3. Add the chopped tomatoes to the sausage & garlic mixture & sprinkle with your paprika & cayenne pepper. Next, stir in your tomato puree and add the spinach.

  4. When the pasta is cooked, drain it & stir into the sausage, tomato & spinach sauce. Top with extra pepper & chili flakes if you'd like!
