Teriyaki Salmon & Veggies

My husband & I love Salmon!

Honestly though, I don't think I had ever tried it until I was about 29... crazy right?

But being on our health kick & making changes from processed food to natural foods, we came up with this recipe & have now made it twice within a week!

So here is what we did in simple terms!


  • 2 Salmon Fillets

  • Frozen Vegetables (We love the Sams Club Vegetable Medley that you find in the freezer section - each pouch has the perfect serving for 2)

  • Teriyaki Sauce (I bought the Kikkoman Teriyaki from Crest because it was low on Weight Watcher points & the sodium count was decent)

  • Extra Virgin Olive Oil

  • 2 pans

  • Aluminum Foil

  • An Oven

  • An Appetite

  • Rice is Optional :)

  1. Pre-heat your oven to 400 degrees.

  2. Get one pan & line it with aluminum foil. Place you salmon fillets on the pan & drizzle a splash of Extra Virgin Olive Oil.

  3. Get another pan & line it with foil. Scatter your frozen veggies across the pan, drizzle on some olive oil & give it a good stir to get them covered.

  4. Place both pans in the oven and set the timer for 18-20 minutes.

  5. After the timer, leave the pans in the oven & drizzle on your teriyaki sauce. Make sure to coat the salmon & stir the veggies so that they're coated.

  6. Place the timer back on for another 20 minutes.

  7. Now is the time you can start your rice (for 2 people I made 1 cup & it was plenty)

  8. When the timer is done, lay out the rice, then veggies, then salmon on your plate & Enjoy!!
